The Eastland Chamber of Commerce held a ribbon-cutting during the grand opening on Friday, February 7th of Luby’s, etc. and Fuddruckers Express inside Eastland Memorial Hospital.

Eastland Memorial Hospital remodeled their kitchen and created a dining area for the new Luby’s, etc. Besides offering great Luby’s meals for patients, Luby’s is open to the public.

Luby’s, etc. is a scaled-down version of the full Luby’s Cafeteria offering fewer selections but the same great Luby’s quality. Luby’s offers a continental breakfast from 7:30 a.m. – 9 a.m. and lunch from 11 a.m. – 1:30 p.m. Monday through Friday. Luby’s Regional Director, Taarron Reed, said they eventually plan to open on Sundays and are working on ways to have it open in the evenings.

During the grand opening, Eastland Memorial Hospital CEO, Ted Matthews gave a long list of additions and upgrades the hospital has made recently but said that “nothing has created as much interest in the community as Luby’s opening.”

Awards were given to EMH employees Brett Bays and Ron Cagle who did all the remodeling of the new dining room and the upgrades to the kitchen that were needed.

EMH HR Director, Leisha Elrod, gave a special thanks to the EMH Volunteers. The volunteer group donated money to cover start-up costs and paid for the remodel of the dining area and kitchen.

Introduced during the ceremony were Luby’s Dietary Manager, Cynthynee Kitchens, and Retail Chef, Penny Matthews.

Luby’s can be accessed through the main lobby entrance of the hospital, then follow the signs.
